Today’s hot topic at OiB is Broccoli. Broccoli is another advantageous gift of nature.
It not indigenous to India rather it can be traced from Italy. The exotic and healthy
veggie of Broccoli is worth consuming and can be adapted to various forms of
cooking and cuisines.

Health Benefits of Broccoli:
Broccoli is one of the stunning natural skincare elements. It contains high
concentration of Vitamin C content. It is heavily loaded with Beta carotene, a very
effective anti-oxidant which destroys free radical of our body. You must know that
Potassium in Broccoli helps in reducing blood pressure of your body. The calcium
present in vegetable is very good for the patients of osteoporosis, as it helps in
building strong bones.

It is said that the darker in color, more nutrients it contains. Slight purple Broccoli
has a lot of carotenoids in it. It is also very effective source of folic acid. It helps in
reducing cholesterol because it is rich in fiber. Broccoli aids in controlling many diseases such as diabetes, various forms of cancer and heart related diseases.

Prudent uses of Broccoli:
You can use Broccoli in the making of mouth-watering soups like cheese and cream
of Broccoli. Try steaming the Broccoli to attain more healthy benefits. Microwave it
for a few seconds at high power and enjoy with a dash of pepper and salt. You can
also include Broccoli in your salads I must tell you that it tastes delicious.

You can also make your rice dishes more peppy and nutritious by adding Broccoli
flowers. Try making Cole slaw with Broccoli and Mayonnaise you will love it for sure. Broccoli Manchurian is one of the best dishes that you can make with broccoli.

Recipe- Quick Broccoli Stir Fry:

I am sharing a quick recipe with you, which has only Broccoli as the main ingredient, and will surely be a treat for all the vegetarians .

Ingredients:

 Broccoli flowers as desired
 White pepper powder 1 tsp
 Salt as desired
 Butter or Oil 2tsp

Method:

 Clean the Broccoli flower and cut into bite size pieces. Include the stalk of the
Broccoli.

 Heat the oil and add all the Broccoli flowers in it. Sprinkle the white pepper
powder and salt on it.

 Cook for like 2 minutes only on high heat while stirring it constantly. Take it off
once ready and serve yummy hot Broccoli Stir Fry.

Note: Never over cook your veggies to avoid lumps. It devoid many nutrients from
the vegetables. Broccoli Stir Fry makes a good snack when you are dieting.

Ingredients:

Mango Fennel Salad

Ingredients:

  • 1 bulb fennel with fronds
  • 3 ripe mangoes , preferably ataulfo, kesar, alphonso
  • 1 tbsp grated ginger
  • 1 small clove grated garlic
  • 3 tbsp lemon juice
  • 5 tbsp olive oil
  • salt to taste
  • pinch of black pepper (optional)
  • handful Pine nuts

Method:

1. Make fennel frond pesto

First, take off the fennel fronds from the fennel bulb, add it with the grated ginger and garlic along with lemon juice and process it in a food processor whiling pouring olive oil in it.

Note: Process only to make sure that everything gets mixed but you can still see the fronds! (If you don’t have a food processor , use mortar and pestle or a whisk).

Then, it is time to remove the pesto in a bowl and add salt and black pepper to it and mix it.

Slice fennel bulb thinly removing the root and stem. Once done, its mango time 😉 ⇒ Remove the skin of the mangoes and slice off the flesh in the same way as fennel.

2. Mix it all together

In a salad bowl, take the fennel and mangoes slices and dress the salad using the fennel frond pesto. You can more salt if needed. Don’t forget to add the pine nuts on top for the crunchy taste!

I have used it as a salad, you can also chop it slightly smaller size and have it in your tacos. The pesto is also great to be used to grill fish or use in dressing cantaloupe or honey dew salad. It is really versatile.
